VITAMIN-RICH FRUIT SALAD


Fruit SaladBursting with antioxidants, minerals and fiber, this fruit salad also includes shredded coconut for added flavor.

Who doesn’t love fruit?  They’re rich in phytonutrients, fiber and minerals–the perfect compliment to the Ancestral Mediterranean diet.  You can also add my personal favorite-watermelon–when it’s in season.

INGREDIENTS
1 honeydew, cubed
8 figs, chopped
2 cups red grapes
15 mint leaves, gently torn
1 teaspoon lime zest
2 tablespoons lime juice
1/2 cup dried coconut, shredded

DIRECTIONS
Set a large bowl next to a chopping board. Halve the honeydew down the middle; clean out the seeds and discard. Cut each half into four equal pieces. Carefully remove the melon’s outer skin with a sharp knife. Once the skin is removed, cube the melon and set inside bowl.
Wash the figs and remove stems. Cut horizontally and place into bowl with melon.
Wash the grapes and toss into bowl with melon and figs.
Add the mint, lime zest, lime juice and shredded coconut. Toss salad so the lime juice and coconut evenly coat the fruit.
