Red Quinoa & Shrimp

Things You’ll Need

1 pound quinoa
1 medium onion, diced
15 crimini mushrooms, diced
2 cups purple cabbage, diced
1 lb. shrimp, cooked
4 tablespoons olive oil
Sea salt and pepper, to taste

Step 1

Prepare quinoa according to manufacturer’s directions and set aside.

Step 2

Heat 1 tablespoon of olive oil and lightly saute onion and mushroom over medium heat until soft, approximately 4 minutes. Set aside.

Step 3

Cook shrimp over medium heat until pink, turning once. This takes approximately 3 minutes. Set aside.

Step 4

In a large bowl, add quinoa, shrimp, onion and mushroom, and diced purple cabbage. Toss with the remaining olive oil and season with sea salt and pepper.
