Greek Baked Shrimp with Feta and Orzo
Today I’m going to show you how to make Greek-style shrimp with feta and orzo, such a great dish.
So I’m going to start with adding about two tablespoons of butter. I like using butter in this dish because we’re going to be cooking shrimp and shrimp and butter are like two best friends. They go really well together.
I’ve diced one whole onion. I’m also going to add some garlic, about three cloves. You can add as much or as little onion and garlic as you like. We’re going to let these simmer at medium heat until they are softened.
Okay so now that we have lightly cooked the onion and garlic, we’re going to add a little bit of sea salt, some ground pepper and some red pepper flakes. I like to add a little spice to this dish. You don’t have to add much, just a tiny, tiny, tiny bit, stir all the flavors together and now we’re ready to add the shrimp.
So I’ve washed all the shrimp. You want to make sure that they’re also dry because you don’t want to add water to this mixture.
Okay so we’ve added the shrimp to the onion and garlic, the tiny bit of red pepper flake.
Make sure that the shrimp is not over-cooked. We want to cook at medium high heat but not for too long, probably about two minutes total.
Okay so now that the shrimp have cooked for a couple minutes, we’re going to put a little bit of olive oil in a baking pan and we’re going to scoop a tiny bit of the orzo that has been cooked for about seven minutes.
So layer the dish. Now we’re going to add some tomatoes right on top. I like to add them whole and what I do is I just break them apart and right here I actually like to season the dish again with a little bit of sea salt and pepper, red pepper flakes.
If you don’t want to make the dish spicy, you don’t have to, a tiny, tiny bit here. And here we go, shrimp, right on top. Smells so good, there we go.
Now we’re going to add a tiny bit of the orzo on top, make sure you don’t over cook the orzo because we’re going to have a little more cooking right now just to kind of fuse all the flavors together.
Now we’re going to add some feta. Just go ahead and crumble it by hand on top. You can add as little or as much as you like. A typical Greek would probably add the whole thing.
We love feta and now for the top we’re just going to add a tiny bit of olive oil, a tiny, tiny, tiny bit of sea salt on top. You don’t need much because the feta has salt in it.
Again a little bit of pepper and we’re going to bake this now for about 15 to 20 minutes, just to allow all the flavors to fuse together and get really nice and juicy. So now we’ve baked the Greek shrimp with feta and orzo.
Look at this, isn’t that beautiful? Now we’re going to spoon out a tiny bit and you can tell it’s ready to be served when the feta gets a light golden brown. There we go.
I love to add a tiny bit of olive oil on top. It can’t hurt. It just makes the dish even more flavorful and because I’m making this a tiny bit spicy, just a little bit of the red pepper flake. My name is Stella Metsovas, and today we have made Greek baked shrimp with feta and orzo. Enjoy.
