Hi there, my name is Stella Metsovas, and I’m a globally recognized health and nutrition expert. Today, I’m going to be showing you how to make a simple dish so good. Baked sweet potatoes with barbecued chicken and a little bit of cheddar cheese on top. Four ingredients in this dish, so easy to make. Now I’ve begun by boiling the sweet potatoes, removed the interior, the flesh, and placed in a bowl. Depending on how many servings you want, these are medium-sized sweet potatoes. You’re going to want one per person. Including kids. Kids love this dish. So you’re going to reserve the actual skins once you remove the flesh, and you’re going to place them on a baking sheet with a tiny bit of olive oil and bake them for about ten minutes so they can get crispy. You want the actual shell to be crispy so it holds the ingredients inside. Now I’m going to lightly mash. You don’t want to overmash it. The flesh from the sweet potatoes, and you’re going to add chicken breasts. I want to add about four ounces per sweet potato and that’s about a half of a chicken breast. I’ve already prepared, lightly spiced it. So I’m going to put the cubes into the mash. Here you can add any sort of spices you like. I typically like to add just a little bit of sea salt and pepper. With kids you can get a little more creative. Maybe even putting a little bit of maple syrup in here just to give it a little bit more of a savory sweet combination. OK, now that I’ve mixed together the ingredients, I’m going to take the crispy shell. Watch how easy this is. OK. So now I’m going to stuff the shells with a little bit of the mixture. There you go. The chicken breast, you can use any sort of meat you like. Chicken breast is going to actually going to taste the best in my opinion with a little bit of barbecue sauce. Be really careful when purchasing barbecue sauces, they could be filled with junk and too much sugar. You definitely want to little bit of sugar in a barbecue sauce, but not overpowering. Now finally, we’re going to add a little bit of cheddar cheese. It’s going to really, really start to kind of fuse all the flavors together and form almost like a custard like consistency on top. It’s so good. You’re going to bake at 350 for about 15 minutes. Once the cheese has melted, your dish is done because we’ve already prepared the chicken. Watch and see what happens next. OK so I can tell they’re ready because I can smell the cheddar cheese. Oh my gosh, it’s so yummy. OK. Just here. Now, I really don’t like to let them cool because I love when the cheese is just nice and warm, and look at that. Can you say orange? Look at this color. Beautiful. So healthy. I mean I really didn’t use that much cheddar cheese, you can get reduced fat if you’d like. Take a little bite. Look at that cheddar. Dipping just a tiny bit of barbecue sauce. Whoa. That is to die for.
