Hi, my name is Stella Metsovas, and today I’m going to show you how to make a Greek avocado salad. Now avocados were really never found in Greece until recently. In fact on the island of Crete they grow avocados and they are really good. They are actually a little bigger then the Haas varieties. Really oily and flavorful, really good stuff. So I have removed the avocado from the skin. And I’m just going to slice very thin ok. Now I’m going to take some spinach and I’m going to layer a dish. This is baby spinach, you can use any green you like. Or if you just want to use avocado and have no greens you can do that as well. So I’m going to arrange the sliced avocado nice and pretty. Avocados are rich in fatty acids that are imperative to your health. And actually the fat keeps you full longer. So it’s important to have fat in your diet. A lot of people stray from the fat but fat is super important. I’m going to put a little bit of walnut on top. The walnut and the avocado go together so well. And walnuts are rich in omega-3 fatty acids. I love adding olives with avocado. I just find that they pair so well together. And today I’m using Cat Cora’s line of organic olives from Greece. These are the Kalamatta olives. Okay now I’m going to add a tiny bit of olive oil. You do not need much because of the avocado and the olives. A tiny bit of vinegar. Some sea salt. The sea salt actually brings out the oils in the avocado and olives. A tiny bit of pepper and I like to add a little bit of dill on top. There you go.
