Hi. My name is Stella Metsovas and I make a career and life out of studying, cooking and eating food. Today, we’re going to talk about healthy, whole-grain bread. Now, in the Mediterranean diet, a large percentage of calories that come from the traditional Mediterranean diet is from whole-grain foods, especially bread. Every time I’m in Greece, there isn’t a time that goes by when a restaurant doesn’t bring a nice basket of whole-grain, healthy, dark bread. My favorite bread to purchase is the sprouted bread because the germ is still intact. What that means is that enzymes and the fiber, which are the most health-promoting elements of whole grains, is still there. When you enrich and process flours, which is typical of these processed, white-style breads, you’re removing all of those healthful elements, magnesium, selenium, all of these minerals that are essential to your health. So, when you pick a healthy, whole-grain bread, flip over the back of the ingredient list and make sure that there is no enrichment going on. So make sure that there isn’t an enriched flour in there because, what that means is the flour has actually undergone processing by removing all these healthful elements, like the germ.
