Hi, my name is Stella Metsovas, and I’m a health and nutrition expert and my specialty lies within the Mediterranean diet. I’m shooting at the beautiful Laguna Beach Culinary Arts Institute and today I’m going to show you how to make one of my dietary staples for the week. It’s a Greek Mediterranean chicken salad that you will absolutely love. Now I’ve already baked the oregano chicken. It’s so simple to make, just get some chicken breasts and use a pretty heavy portion of dried oregano and bake it at 350 for about 25 minutes, okay. So you’re going to want to use olive oil, oregano, sea salt and pepper. I’ve already cut up some Romaine lettuce here. Greek diet is known for bean consumption, high in B vitamins, make sure to include beans in your diet weekly. In fact I do daily. Now I’m going to add some halved tomatoes, my favorite tomatoes for this dish are grape style tomatoes or cherry tomatoes. They’re really sweet, a little bit of red onion, one of the star ingredients, Kalamata olives, oregano, chicken, make it all nice and pretty. Okay so here is the dish and I’m going to add a simple vinaigrette of olive oil, a little bit of lemon, sea salt and pepper. There you go. Kaliorixy and enjoy.
