Healthy Quick Meals: Cauliflower Fritters Recipe

I’m going to change the way you view cauliflower with this recipe.

Cauliflower is one of the most versatile and texture-building ingredients you can use in cooking healthy food.  This recipe can be served as a replacement to beef patties, or a Michelin style appetizer (get your Daniel Boulud on!), by molding the cauliflower mix into bite size rounds, topping with micro-greens and chèvre (the fancy French name for soft goat cheese).  I also love pairing this dish with radicchio and cold-pressed extra virgin olive oil.

  • 4 cups cauliflower florets
  • 2 carrots, grated
  • 2 whole eggs
  • 1/2 cup almond meal
  • 3 tablespoons fresh parsley, chopped
  • 1 teaspoon fresh lemon juice
  • 1/2 teaspoon salt
  • 1 teaspoon black pepper
  • 2 teaspoon fresh thyme
  • 1 teaspoon ground cinnamon
  • 1 teaspoon smoked paprika
  • 1 tablespoon butter

  • Add the cauliflower to a food processor and process until the texture of the cauliflower has broken down to a grain-like consistency. Transfer to a mixing bowl.
  • Add the grated carrots, eggs, almond meal, parsley, lemon juice, salt, black pepper, thyme, cinnamon and paprika to the processed cauliflower. Mix until thoroughly combined.
  • Heat butter in the frying pan over medium-high heat. Scoop out 4 equal amounts of the mixture with a spoon and drop them into the pan. Lightly flatten with a metal spatula and cook them for 2 to 3 minutes on each side or until golden brown.
